The hawker centre is the genuine Singaporean foodie experience - a large, sheltered but fairly open venue with ceiling or wall fans for ventilation. Food here is cheap and good - if it isn't, stalls go out of business very quickly. Be prepared to be spoilt for choice - a wide variety of local cuisines are offered at any of the hawker centres situated around the island.

The atmosphere at hawker centres is casual and generally raucous - find a place to sit, choose which stall(s) you want to patronise, order your food (from as many stalls as you like), and indicate your table number. For stalls with a self-service policy, you will have to wait for your dishes to be prepared before picking them up yourself. Payment is done when the food is served. Either way, you will end up with a feast before you to tantalise your tastebuds.

Formerly called Glutton's Square, Makansutra Gluttons Bay was relocated near the Esplanade Theatres in 2005. It may not contain as many stalls as other hawker centres do, but Gluttons Bay provides a fantastic view of the Marina Bay skyline, at the same time serving up Singaporean hawker fare under the open night sky. Be assured with the food quality as most of the hawkers here have decades old experience whipping up their trademark dishes.

Formerly a wet market in the 1950s, Maxwell Road Food Centre is now one of the most well-known hawker centres in Singapore. Although not exactly scoring high marks for cleanliness, it draws large crowds due to the many stalls selling traditional Chinese delicacies such as turtle soup and pig's brain. It reopened in 2001 after renovation works were completed at a cost of $3.2 million.
